I am so glad to know that we as a coffee city in Melbourne and our coffee roastery are bringing in fresher, higher grade and generally better coffee than ever. What it comes down to at the end of the day is the raw product that we get in
Coffee will never be as good as what it was when it was inside its coffee cherry. As such, the less we do to it during roasting, brewing, packaging and transportation the better.
Currently we have some amazing Kenyans (Gachami AA and Thithi AA) and Guatemalans including the Small Producers of Atitlan, Entre Volcanes and Las Nubes. The El Salvadorian coffees are tasting awesome too including the El Carmen, San Cayetano and El Timbo. We also have a lot of lovely Brazils including the Cup of Excellence #9 Serra Dos Crioulos and the sweet Cambara.

For the larger mains, you will find the Pad Thai: organic zucchini noodles, coriander, basil, avocado, lime and capsicum with activated nuts, Cannelloni: broccoli cheddar cannelloni with herbed tomato sauce and cashew parmesan and the popular Mexican Enchilada Plate: Gluten free corn tortillas filled with sweet potato, eggplant, corn, black beans, capsicum & spinach & cashew sour cream with spicy tomato sauce & served with guacamole and heirloom tomato salsa. We sought some advice from tea guru Nathan Wakeford from Somage and we came up with our own Monk Bodhi Dharma chai recipe. Even though we are all multi-tasking creatures at Monk, during busy times, one of our duties is to be chai wallahs (a wallah is one who performs a specific task). We brew our chai for 4 minutes (30grams) and then steam it with the customer’s choice of milk. We then sieve it in a Japanese handmade chai pot and serve it in custom made pottery made by the wonderful Karen Ho. Bliss!
